Hiroshi Kanemura’s culinary journey began at the age of 14 in his family’s countryside eatery, where he first learned the discipline and patience behind traditional Japanese cooking.

Driven by a desire to master his craft, Hiroshi spent years working across coastal towns and urban kitchens, refining his understanding of seasonality, knife work, and fire-based techniques. His dedication eventually led him to helm a small but respected restaurant in central Tokyo, earning recognition for its understated approach and ingredient-driven menus.

Now the founder of Ember & Olive, Chef Kanemura brings his philosophy to India offering a dining experience rooted in tradition, guided by seasonality, and shaped by the warmth of open-fire cooking.
